On Thursday May 16, 2024, the Bowmann Hotel is delighted to welcome Domaine Cazes to the 99 Haussmann restaurant for an exceptional evening. 
For the occasion, Chef Charly Salierno and Benoit Briu have devised a bespoke menu for a perfect match between food and wine.

On the menu?

Chef Charly Salierno & Benoit Briu will open the ball with an aperitif of 3 tapas & 2 glasses of wine, per person.

This will be followed by dinner, where you'll have the opportunity to taste 3 glasses of wine to accompany the main course and dessert created by Chef Charly Salierno.

This tasting will be hosted by Benoit Briu.

About the Domaine Cazes

Maison Cazes is located in the heart of the Roussillon region, between the Pyrenees and the Mediterranean, near Rivesaltes.
The estate was founded in 1895 by Michel Cazes, who grew vines to supply the local wine trade with raw materials. In 1927, his son Aimé convinced him to buy Mas Joffre, an 8-hectare vineyard that once belonged to the famous field marshal. As the years went by, the estate was enriched by neighboring plots, until it reached 40 hectares in the 1950s.

At the same time, under the impetus of Aimé's eldest son André, the first Cazes bottles appeared. In 1971, Bernard, the youngest son, joined the family business after studying modern winemaking techniques. He took over the running of the business, while his brother became head of sales.
Today, Emmanuel Cazes, Bernard's son and thus the 4th generation, has taken over the management of vinification, under the direction of Lionel Lavail.

Today, the Cazes estate covers 220 hectares, farmed organically and producing 14 different wines each year.
The estate is ideally located: CÔTÉ TERRE (domaine Cazes), in the Agly valley on a terroir at the foot of the Corbières foothills - CÔTÉ MER (acquisition in 2012 of domaine Les Clos de Paulilles), an estate recognized the world over for the quality of its wines. The know-how acquired over several generations has resulted in a mastery of wine-making that is second to none.


Charly Salierno is the executive Chef of our kitchen. This gifted thirty-year-old, formerly of the Château de Bagnols en Beaujolais and of the Bocuse group's brasserie Le Sud, is taking over the reins of 99 Haussmann, playing with the codes of classic and modern.
