Since his arrival in 2022, Lyon-based chef Charly Salierno has been delivering contemporary cuisine inspired by the flavors of yesteryear to Sunday brunch at Restaurant 99 Haussmann. Bold, creative and inspired, he elegantly revisits the classics of French cuisine. A former chef at Château de Bagnols in the Beaujolais region and Brasserie Le Sud, he knows how to turn the vol-au-vent of our grandmothers into a condensation of flavors, or a pâté en croûte into a remarkable object de gourmandise.
